Dr. Oz The Carb Lover's Diet: Eat 5 Nights of Carbs to Lose 5 Pounds

Who thinks they are addicted to carbs? Dr. Oz says the carbs are not to blame for weight gain, it's behavior. He demonstrated with two tubes filled with foods.

One tube was filled with lean protein, veggies, and beans all which will keep you feeling full all day. The second same-sized tube was filled with pasta that won't keep you full. Chances are you'll feel hungry again in just a few hours and reach for another tube's worth of carbs. That results in a diet disaster and weight gain.

Lisa Lillien, author of the Hungry Girl brand of books and Hungry-Girl.com, and talent on The Food Network has spent her career sharing food short-cuts to that are healthy and allow her to eat the foods she loves.

How is it possible to eat carb-laden foods and still lose weight? Ms. Lillien says it's about eating the right carbs at the right time and the key is keeping the fiber count up.

Dr. Oz says the rule to eating carbs for weight loss is to always include protein when eating carbs. He has asked Ms. Lillien to design five meals, each under 350 calories, that are healthy, filling and satisfying.

Dr. Oz Carb Lover's Meal #1: The Hungry Girl's Cheeseburger Mac & Cheese
The key to the Hungry Girl's Cheeseburger Mac & Cheese is Fiber Gourmet pastas, a low calorie pasta that is high in fiber. Lean turkey provides healthy protein and cauliflower fills you up and adds volume. Increase the richness without adding a lot of calories with the Hungry Girl's favorite food: Laughing Cow cheeses and cream cheese.

The Numbers:
Traditional Cheeseburger Mac & Cheese comes in at 770 calories.

Dr. Oz Carb Lover's Meal #2: The Hungry Girl's Vodka Impasta
Traditional penne pasta with vodka sauce is has lots of cheese translating to lots of calories. The Hungry Girl brings in Laughing Cow cheeses for flavor while reducing the calories to that, she adds lots of veggies for bulk and flavor satisfaction.

Click the link for the recipe for The Hungry Girl's Vodka Impasta from DoctorOz.com.

The Numbers:
Traditional Penne with Vodka Sauce has 640 calories.
The Hungry Girl's Vodka Impasta has 282 calories and a whopping 22g of fiber per serving.

Dr. Oz Carb Lover's Meal #3: The Hungry Girl's Pizza Stuffed Potato
The Hungry Girl takes traditional pizza flavors, onions, peppers, mushrooms and brings Applegate Farms Sweet Italian Sausage made with turkey and chicken. Remove the inner portion of the potato, cutting starchy calories, and stuff with flavorful veggies.

Click here for the full recipe for The Hungry Girl's Pizza Stuffed Potato from DoctorOz.com.

The Numbers:
Traditional stuffed potato has about 620 calories.

Dr. Oz Carb Lover's Meal #4: The Hungry Girl's Fully Loaded Baked Ziti
Boca vegetarian soy crumbles provide the protein in this dish along with lots of veggies and, of course, cheese.

The Numbers:
Traditional baked ziti has 670 calories.

Dr. Oz Carb Lover's Meal #5: The Hungry Girl's BBQ Chicken Quesadilla
The Hungry Girl recommends to pair the BBQ Chicken Quesadilla with a salad. This quesadilla is loaded with flavor by mixing Laughing Cow cheese with BBQ sauce. The real secret is choosing a tortilla that is 80-100 calories.

The Numbers:
Traditional BBQ chicken quesadilla has 600 calories per serving.

Two quick tips from The Hungry Girl featured before and after commercial breaks:
  • Wonton Shells: Place a wonton wrapper into each cup of an oiled muffin pan and press wonton into sides. Bake at 350F for about 8 minutes until golden brown. Fill cups for healthy snacks. Check out Hungry-Girl.com for recipe ideas.
  • To provide that satisfying crunch of fried foods, use Panko bread crumbs on your favorite foods and bake. Panko provide fiber and that crispy texture you're looking for.

Dr. Oz: Hungry Girl's Top Carb Cheats

Ms. Lillian reminds viewers to read the food labels at the grocery store. A bag that looks like one serving could easily be 2 or 3 servings. She says her life is about finding things that taste like they are bad for you but really they are not.

The Hungry Girl has four healthier versions of your favorite “bad-for-you” foods.

Dr. Oz: Hungry Girl's Carb Cheat #1: Tortilla Chips
Hungry Girl recommends Guiltless Gourmet Tortilla Chips as a healthier version of tortilla chips. She says 18 chips make up a serving and they are less than half the calories of traditional tortilla chips. Baked, not fried, Guiltless Gourmet Tortilla Chips come in many flavors and they don't taste greasy so can stop after only 18 chips.

Dr. Oz: Hungry Girl's Carb Cheat #2: French Fries
Her new favorite carb treat is Carrot Fries. The Hungry Girl has whipped up a recipe that mimics french fries but packs nutrition without calories. Four large carrots make up one serving with only 160 calories. She says her Carrot Fries taste like sweet potato fries.

Dr. Oz: Hungry Girl's Carb Cheat #3: Muffins
One muffin can pack 800-900 calories and these super-sized carb treats are often labeled as four servings a muffins. Who only eats ¼ of a muffin? The Hungry Girl says Vitalicious VitaTop muffins are life changing. They are hidden in the refrigerated or freezer section of your grocery store. The Deep Chocolate flavor was called decadent.

Dr. Oz: Hungry Girl's Carb Cheat #4: Snack Crackers
To satisfy the crunchy carb sensation provided by snack crackers, The Hungry Girl recommends Doctor Kracker Crispbreads in a variety of flavors. Doctor Kracker Crispbreads are a large cracker that will leave you satisfied after only one serving, says The Hungry Girl. Dr. Oz says this is one of his favorite snacks.

She researches and preps the food shows like Iron Chef, Rachael Ray, and Chopped, Katherine Alfrod, Director of the Food Network's Test Kitchen joins Dr. Oz share her calorie cutting secrets.

With TV shows, a magazine and cookbooks to work for, does Chef Alfrod ever run out of ideas? She says food is like music, there's always another combination that someone can come up with to create something new. Check out the latest cookbook from the Food Network, 1,000 Easy Recipes.

Dr. Oz Food Network Calorie Cutting Secret #1: Chicken or Poultry Burger
Add a grated apple to ground poultry, for chicken or turkey burgers, to maintain moisture while cutting calories and fat.

Dr. Oz Food Network Calorie Cutting Secret #2: Cream Soup Without Cream
Instead of cream, thicken a soup with rice. Cook the rice in the soup then puree. Rice provides richness and creamy texture without cream.

Dr. Oz Food Network Calorie Cutting Secret #3: Creamy Ranch Dressing
Chef Alfrod recommends using buttermilk to create a low calorie creamy ranch dressing. Some people shy away from buttermilk thinking it's akin to butter but in fact buttermilk is a by product of butter which is then cultured.

Buttermilk Ranch Dressing Recipe from the Food Network on DoctorOz.com
2 scallions, chopped
1/2 tsp minced garlic
1/4 cup buttermilk
1/4 cup plain yogurt
2 tsp rice vinegar
Sugar and salt, to taste

Purée chopped scallions, minced garlic, buttermilk and plain yogurt with rice vinegar and a pinch of sugar and salt. Use on two heads butter lettuce with a 1/4 cup shredded carrots, some fresh cilantro and parsley.

The Numbers:
Traditional ranch dressing: 140 calories
Food Network ranch dressing: 20 calories

Dr. Oz says the Food Network's version of ranch dressing tastes the same and can't tell the difference from the traditional version.

Grated cauliflower adds bulk and nutrition while cocoa and coffee provide background flavor.

The Numbers:
Traditional chili: 410 calories
Food Network veggie chili: 230 calories

Top chefs share their favorite and healthiest food they have ever eaten.

Dr. Oz: Lidia Bastianich's Healthiest Favorite Food - Turkey Meatball
Lidia Bastianich, cookbook author and star of the show Lidia's Italy, says the healthiest food that is also a favorite is turkey meatballs. She says turkey meat has a lot of flavor and pine nuts in the meatball provide a unique flavor to this baked meatball.

Dr. Oz: Marcus Samuelson's Healthiest Favorite Food – Grilled Fish Tacos
Chef Marcus Samuelson, restauranteur and author of several cookbooks including New American Table, says his favorite healthy food is grilled fish tacos. His Grilled Fish Tacos recipe was inspired by a dish he served at The White House. Featuring grilled white fish with warmed corn tortillas filled with greens and vegetables.

For a short cut, Dr. Oz recommends Orca Bay Frozen fish filets, found in the freezer at the grocery store. [I don't understand how this is a short cut since the fish still has to be cooked and all. I can see how having fish filets in the freezer can allow for this meal to come together quickly.]

Gail Simmons is a writer for Food & Wine Magazine and a host of Bravo's Top Chef Just Desserts. Her favorite healthy food is Roasted Carrot and Avocado Salad from ABC Kitchen. Including edible flowers, roasted carrots and creamy avocados, Dr. Oz calls this dish visually arresting.
